Too much lettuce & cucumber? An unexpected soup!

Some seasons everything clicks and you find yourself with a lot of produce to deal with! Especially with cucumber and salad, you can suddenly have so much that you don't really know what to do with it all.

This recipe is our solution to this over-abundance. The base of the soup tastes good as it is, but there is always room for refinement - cooking with for example, a dl or two of crème fraiche is super tasty, or why not add croutons or other toppings?

Good, simple soup recipe of cucumber, peas and lettuce. Oh my!

Ingredients:

1 tsp rapeseed oil
A small bunch of green onions (coarsely chopped)
1 large cucumber (coarsely chopped)
A large head of lettuce (coarsely chopped)
About 225g frozen or freshly harvested peas
1 bouillon cube or 4 - 5 teaspoons of vegetable bouillon powder - adjust according to taste and need

Directions:

  1. Boil 8 dl of water if using home-grown cucumbers, as they contains more water than those from the store. If purchased cucumber use 9 -10 dl water.
  2. At the same time, heat the oil in a large pot and fry the onion until softened. Add the cucumber, peas and salad. Pour in the boiled water and broth. Stir and let simmer, covered, for about 10 minutes or until all the vegetables have softened.
  3. Blend everything with an immersion blender to a smooth consistency.
  4. Taste and season with salt and pepper or any seasoning you wish.

Serve hot or cold, topped with yoghurt or crème fraiche.

Simple, good and quick slim food.
